This is what I tell myself. The one or two tables a month that dont tip make up for one or two tables a week that dont get 100% service from me due to understaffing/lack of mental clarity for the day/whatever other stuffs going on in the kitchen. You win some, you loose some, but you only really loose if you admit it.
